1 Introduction
In the UK, the cooler industry sales accounted have been over 220 million tons in 2006 compared with the same period last year grew by 15%. The sale has achieved about 270 million pound sterlings. Annual sales are expected to break through 250 million tons in this year, and realize the sale over 300 billion pound sterlings(Dell, 2009).

Ice cream has obtained more and more people’s love since the advent in the 19th century because of its beautiful appearance, feeling of ice-cold, happy and sweet(Dell, 2009). At present, consumption per person in the world's biggest ice cream consumer- American is 23 kg; in Australia is 17kg, in Sweden is 16kg, Dutch is 18kg, Japan is 11kg. The consumption per person in the UK is 15kg, which belongs to the middle level. Therefore, though Ice cream market has been increasing at 10% speed every year from 1990s, cold drink production in the UK has increased 12 times, but the potential market is still huge. UK’s huge potential market of ice cream has attracted enormous capital. All of this has brought broad market prospect for UK’s ice cream industrial development.
There is a high fat content in premium ice cream. It is often sold as a take-home product. Premium ice creams are made with real eggs, unsalted cream. There is much more air in the cheaper ice cream than in the premium ice creams. The more the contents of the air , the more speed the ice cream melt. However, there is no air in the Gelato. It is made with egg yolks, milk and less cream so that it is less fat than regular ice cream.  Sorbets have no milk, cream or eggs which are made from fruit, sugar, and lemon juice. They were very popular during Victorian years, when they were served as palate cleansers between rich, heavy courses.
A scenario about ice cream and the present situation of the market has been prepared. Subsequent telephone conversations and email communications clarified outstanding issues and the proposal has been prepared. Besides,A compare will be given that identifies how gelato is perceived by consumers relative to Carte D’Or ice cream and whether there is scope for product development within this ’new’ category.
