Reflective Report on the Operation in Lakeside

1. My Initial Thoughts on the Operation

The best way to learn is to combine both the theory and practice. After a few sessions’ study, I got a grasp of what should be done during the time when if I work in the different positions in a hotel according to the theory. What was great is that I would have an opportunity to work in Lakeside for seven days during October 11th 2011 to November 15th 2011. I couldn’t wait to welcome the next few days’ operation in Lakeside. I thought I will take a good use of this precious to recognize if I had really understand how to behave excellent in this work and if not, what should I do to improve myself in the future.

2. Real Experiences in Lakeside: Challenging and Easy Ones

Here my operation work in Lakeside started. I worked one day per week and very day’s work was concerning to different positions such as kitchen chef manager, kitchen chef, waitress, runner and marketer, host and so on, so that very days’ work was quit different from each other. Though these works were separated with each other, I would like to classify them into two aspects: the work in restaurant and the work in kitchen. However, very kind of work was not that easy as I have thought, there was much challenging for me to complete.

2.1 Work in Restaurant
My first operation started in restaurant as a waitress, following up with the positions of host, runner and marketer. There was a common point of these works that contacting with customers. It’s a service-type work. I should learn about the standard service cycles, skills of recording and describing the dishes which was required by customers, and even recognize the potential customers and persuade them to enter our restaurant. The ability of communicating, service and dealing with the unpredictable problems were needed.
Something was comparable easy for me to grasp. I can understand the standard service operations, since it was very clear to read and reference to. Since I am very outgoing, I was very found of restaurant work. So communicating with customers was not that difficult for me.
