摘要:本文是一篇中国菜英语翻译的方法研究论文。俗话说,民以食为天。中国菜系源远流长,以其色香味俱全而闻名中外。中国菜系多种多样,深受世界人民欢迎。随着中国的发展,吸引了大批的外国游客,许多外国人对中国食物非常感兴趣。中式菜肴名称中更是充满了中国人的智慧和幽默。然而,大多数中国人通常毫不考虑中西方文化差异,对中国菜采用直译的翻译方法。结果导致许多外国人看见菜单倍感困惑,而且不知道该吃什么。因此,准确形象的把中国菜翻译成英译十分重要,而且还可以使外国人在品尝中国美味的时候更好的理解中国菜的艺术和文化内涵。本文提出了一些把中国菜翻译成英语的方法。中国菜的译名在中国菜系文化的发展中起着举足轻重的作用。

4.2 Five methods for interpreting Chinese dishes into English


First, literal translation


Literal translation, also called direct translation,is word-for-word translation, which is used for restoring the original visage of food. It is the most common way in translation, although it is also the invalidest way.


In this part, there are three ways for interpreting Chinese dishes into English literally. First, to begin with the cooking way. Second, to begin with the main ingredients. Third, to begin with the mouth feeling. Next, I will talk through these ways in detail.


First, to begin with the cooking way literally. Because some dishes are made just by one ingredient without accessory while some are made not only ingredients but also accessory or seasoning, there are three formula for interpreting Chinese dishes into English. The first one is the the cooking way plus the ingredient or the shape of it. The second one is the cooking way plus the ingredient or the shape of it with the accessory. The third one is the cooking way plus the ingredient or the shape of it with or in the seasoning.


First, the cooking way plus the ingredient or the shape of it. Such as “煎鸡蛋”,which is translated into 'fried eggs'. This name is used the formula of the cooking way plus the ingredient. Then “炒鳝片”, which is translated into 'stir-fried eel slice. This name is used the formula of the cooking way plus the shape of the ingredient.


Second, the cooking way plus the ingredient or the shape of it with the accessory. Such as “蟹粉蒸鱼肚”,which is translated into 'stewed fish tripe with crab meat'. In this dish, fish tripe is the ingredient while the crab meat is the accessory. It is used the formula of the cooking way plus the ingredient with the accessory. Another example, “辣子炒鸡丁”,which is translated into 'stir-fried diced pork with chili'. The diced pork is the ingredient while the chili is the accessory. This dish is used the formula of the cooking way plus the shape of the ingredient with the accessory.


Third, the cooking way plus the ingredient or the shape of it with or in the seasoning. Such as “红烧鲤鱼头”, which is translated into 'braised carp head with soy bean'. In this dish, carp head is the ingredient while the soy bean is the seasoning. This dish is used the formula of the cooking way plus the ingredient with the seasoning. Then another case, such as “清炖猪蹄”, which is translated into 'stewed pig hoof in clear soup'. In this dish, pig hoof is the ingredient, the seasoning is the clear soup. It is used the formula of the cooking way plus the ingredient in the seasoning. In addition, “辣味烩虾球”, which is translated into 'braised prawn balls with chili sauce'. In this dish, prawn ball is the ingredient while chili sauce is the seasoning. This dish is used the formula of the cooking way plus the shape of the ingredient with the seasoning.


Besides, to some dishes, they may have not only one ingredient, they also have accessory and seasoning. Such as “东瑶花椒炖石蛙”, which is translated into 'stewed frog with scallop and fish maw in soup '.
