摘要:本文是一篇中国菜英语翻译的方法研究论文。俗话说,民以食为天。中国菜系源远流长,以其色香味俱全而闻名中外。中国菜系多种多样,深受世界人民欢迎。随着中国的发展,吸引了大批的外国游客,许多外国人对中国食物非常感兴趣。中式菜肴名称中更是充满了中国人的智慧和幽默。然而,大多数中国人通常毫不考虑中西方文化差异,对中国菜采用直译的翻译方法。结果导致许多外国人看见菜单倍感困惑,而且不知道该吃什么。因此,准确形象的把中国菜翻译成英译十分重要,而且还可以使外国人在品尝中国美味的时候更好的理解中国菜的艺术和文化内涵。本文提出了一些把中国菜翻译成英语的方法。中国菜的译名在中国菜系文化的发展中起着举足轻重的作用。

in Chinese dietary structure. Similarly, the proportion of vegetables is also increasing in Western dietary structure. Chinese diet structure has integrated with Western diet. Westerners think that dishes appease hungry, so they eat joint, whole piece of chicken and so on. However, the key point of Chinese dishes is taste. Many ingredients which are outcast by westerners are excellent raw materials. Chinese cooks change the ingredients into delicious food magically, which foreign cooks have no way to them. Westerners think they pay much more attention to the proper arrangement of nutrition than Chinese people when introducing the dietary characteristics. Westerners' food industry is more developed thanChina's, such as cannery, fast food and so on. Although food are almost the same taste, they are full of good nutrition. And people can save a lot of time when eat these fast food. Therefore, westerners are more stronger than Chinese people. According to the obvious difference in the character between Chinese and Westerners, Chinese people are called plant character, while Westerners are called animal character.


Ⅳ Some Methods for Interpreting Chinese Dishes into English


The translated names of Chinese dishes are in varied forms. In order to translate the names of Chinese dishes exactly, the interpreter must figure out what main food ingredients are, what dosing is and the ways of preparing food. The interpreter may introduce the nutrient value , related stories and history stories of the dishes if time permits. It will not only promote westerners' appetite, but also spread Chinese dietary culture.


4.1 The preparation work


The interpreter must make some preparations before translating the names of Chinese dishes into English. To start with, the interpreter may need to know some professional knowledge in cooking except the translating theory, which is the basis of an excellent job. Secondly, the interpreter has to learn some basic cooking terminologies.


Here are some terminologies applied to cooking.


The words related to ingredients: chicken, duck, goose, fish, meat, pork, beef, veal, mutton, lamb, fillet, chicken breast, turtle, seafood, shrimp, crab, rabbit, pigeon, quail, lobster, oyster, snake, bacon, sausage, ham.


The words or phrases related to cooking: stir-frying, pan-frying, quick-frying, deep-frying, twice cooking, braising, boiling, steaming, simmering/stewing, smoking, broiling/grilling, scalding, sauting.


The words related with condiment: sesame oil, salt, soy sauce, vinegar, cooking wine, monosodium glutamate, chicken bouillon, sugar, shallot, ginger, garlic, chilli, chill oil, tomato sauce.


The shapes of material: slice, shred, dice, fillet, mince, mash, cube, piece, strap, chunk, ball, roll.


The main taste: sour, sweet, spicy, salty, chilly, hot, spicy and hot, sour and sweet.


Above all, there are five methods for interpreting Chinese dishes into English. First, literal translation. Second, literal translation and transliteration.
