摘要:本文是一篇中国菜英语翻译的方法研究论文。俗话说,民以食为天。中国菜系源远流长,以其色香味俱全而闻名中外。中国菜系多种多样,深受世界人民欢迎。随着中国的发展,吸引了大批的外国游客,许多外国人对中国食物非常感兴趣。中式菜肴名称中更是充满了中国人的智慧和幽默。然而,大多数中国人通常毫不考虑中西方文化差异,对中国菜采用直译的翻译方法。结果导致许多外国人看见菜单倍感困惑,而且不知道该吃什么。因此,准确形象的把中国菜翻译成英译十分重要,而且还可以使外国人在品尝中国美味的时候更好的理解中国菜的艺术和文化内涵。本文提出了一些把中国菜翻译成英语的方法。中国菜的译名在中国菜系文化的发展中起着举足轻重的作用。

ⅠIntroduction


Chinese people has always beening very particular about food. Chinese cuisine has experienced four or five thousand years of development history. Chinese cuisine is famous for its excellent cooking skills and rich cultural connotations all over the world. With the influence of entering WTO, the success ofBeijingin winning the bid to host the 2008 Polemic Games and the development of tourism,Chinahas become integrated with the global market. It not only absorbs foreign capital and advanced technology but also attracts a large number of foreign visitors. They must want to taste the delicious Chinese food when enjoying the beautiful scenery inChina. However, more and more Chinese interpreters translate the names of Chinese dishes literally without concerning about the differences between Chinese and Western. As a result, many interpreters are often misunderstood by foreign visitors because the interpreters lack of cross-culture awareness and ability to translate some Chinese dish names correctly. Besides, they don't pay enough attention to the translation methods for the names of Chinese dishes, which influences the spread of Chinese dietary culture all over the world. Sometimes they may make foreigners confused. Therefore it is vital to translate the names of Chinese dishes exactly and accurately so that foreign tourists can understand the art and culture connotation of the names of Chinese dishes better when they are tasting the Chinese dishes. So this essay discusses some translating methods for interpreting Chinese dishes into English so that the Chinese profound dietary culture can be spread better. The translation of the names of Chinese dishes has been playing an important part in the spreading of Chinese cuisine culture.


ⅡEight Great Traditions of Chinese Cuisines


There are eight major world famous culinary cuisines inChina.


Chinese food has a different flavour and the typical character of itself because of its large territory and nationalities. In general, the Chinese food can be divided into eight regional cuisines in round figures. They areShangdong Cuisine,SichuanCuisine, Guangdong Cuisine, Fujian Cuisine, Jiangsu Cuisine, Zhejiang Cuisine, Hunan Cuisine and Anhui Cuisine.


Shangdong Cuisine


Shangdong cuisine is composed of Jiaodong cuisine andJinancuisine. It is light and not greasy. It is famous for its aroma, freshness, crispness and soft. Shangdong dishes is usually pungent because they are often uses shallot and garlic as seasoning. Shangdong cuisine lay stress on all kinds of soup. Consomme is clear and fresh while creamy soup is thick and tastes strong.Jinancuisine good at deep-frying, grilling, frying and stir-frying. In contrast withJinancuisine, Jiaodong cuisine is known as seafood with fresh and light. The major part of Shangdong cuisine is seafood. The most famous dish is Sweat and Sour Carp (糖醋鲤鱼). A deep-dyed carp is caught from The Yellow River. However, more and more carps are caught from other places because of the pollution of The Yellow River. Shangdong is perfect for its pure and fresh with the Qingdao Beer.
